Everyone flits and flits from one enticing buffet to another, even more tempting, picking up a bit of foie gras here, a bit of charcuterie there, a few organic crudités along the way, until their plate (the first one…) is perfectly filled. The seafood platter at Les Grands Buffets is particularly special because it's monumental… and you can come back to it as often as you like. So, there's no need to choose between oysters, mussels, clams, crabs, shrimp, and sea snails… Salmon is also well represented and comes in all forms: smoked, Bellevue, aspic, marinated with dill, gravlax, in salads, as a mousse… As for the sacrosanct foie gras, it's available in every imaginable form: plain, with salt, pepper, Basque chili, Muscat de Rivesaltes, or in crème brûlée. Unless, of course, you prefer it pan-seared as an escalope or perched atop your tournedos. In that case, head to the rotisserie.
