SAULIEU AND ITS HISTORY Saulieu is a small town located on the former National Route 6 (now the D906), in the heart of Burgundy, at the junction of the four Burgundian departments: Yonne, Côte-d’Or, Nièvre, and Saône-et-Loire. Founded by the Romans along the road that led from the south to the north of Gaul, this town has always served as a staging post. This explains its gastronomic reputation: in the 1950s, for example, Saulieu was a 5-hour drive from Paris, and travelers needed both food and transportation. Alexandre Dumaine, the chef of the three-Michelin-starred L’Hostellerie de la Côte-d’Or, entertained the entire European jet set on their way to the Riviera or the Alps. It was this historic establishment that captivated Bernard Loiseau, and he decided to revive this legendary restaurant. But the arrival of the motorway, the airplane, and the TGV (high-speed train) changed everything. While Saulieu is no longer a mandatory stopover, it is now a destination, thanks to the A6 motorway. Once through the doors of the Relais Bernard Loiseau, time stands still, and you are enveloped in a warm and refined haven, disconnected from the demands of daily life. The Relais Bernard Loiseau is a unique experience that goes far beyond the excellence of its cuisine; it is a singular place imbued with authenticity, warmth, savoir-vivre, and history. BREAKFAST IN A LEGENDARY ROOM Start your day in the Alexandre Dumaine Room, a listed historical monument, which Dominique Loiseau had registered in 2010. Breakfast is served daily in this legendary room, which has retained its early 20th-century décor, with faux-wood paneling, glazed walls, and arabesque motifs on the faux-wood painted ceiling beams. The Perrusson ceramic floor is intact. A majestic handwritten book from 1951, which served as a logbook, stands at the entrance to the room, adding to its prestige. A portrait of Alexandre Dumaine, painted by an anonymous artist and dated November 12, 1937, along with menus and photographs, adorn the walls. Hours: 7:00 a.m. to 11:00 a.m.
